The name "My Unbreakable Recipe Box" comes from seeing generations of family members who have broken recipe boxes that are too precious to replace. Of course I have my own (already broken) recipe box which will always have a special place in my kitchen, but this one will never break.

Vegan and Paleo Breakfast Muffins!

These muffins are so delicious! It took a few different tries to perfect the recipe but I did it! They have no added sugar and are vegan and paleo! This is a great base recipe to add things to, in the future I will definitely be adding shredded coconut!

2 cups blanched almond flour
1.5 tsp baking powder
3/4 tsp salt
1.5 mashed bananas
1 cup coconut milk (or other dairy free milk)
1/2 cup grapeseed oil
1 Tbsp vanilla

Optional:
1 cup chopped walnuts
1/2 cup raisins

1. Preheat oven to 350 degrees. Line a muffin pan with liners or grease the cups.
2. Mix together all of the dry ingredients.
3. Mash the banana, then stir in the milk, oil and vanilla.
4. Pour the wet ingredients into the dry and mix together well.
5. Add optional ingredients. Whatever you have in your pantry for nuts or dried fruit would be great!
6. Generously spoon into muffin tins.
7. Bake for 35-40 minutes. I like my muffins to be very golden-brown. 

Makes 14 standard sized muffins.

Each muffin has 200 calories, 7g of carbs, 2g of fiber, 3g of protein and 2g of sugar. I usually eat two muffins along with one of my breakfast smoothies and it makes a very well rounded breakfast with 597 calories, 9g of fiber and 12g of protein!
