The name "My Unbreakable Recipe Box" comes from seeing generations of family members who have broken recipe boxes that are too precious to replace. Of course I have my own (already broken) recipe box which will always have a special place in my kitchen, but this one will never break.

Paleo Dark Chocolate Cinnamon Bread

This recipe is adapted from Starbucks' Chocolate Cinnamon Bread! I had already successfully converted the recipe to gluten-free using a flour blend and xantham gum and I wanted to challenge myself to see if I could make it paleo!

1/2 cup grapeseed oil
1/4 cup honey*
2.5 eggs
1 cup blanched almond flour
2/3 cup cocoa powder
1/2 tsp cinnamon
1/2 tsp salt
1/3 tsp baking powder
1/4 tsp baking soda
1/4 cup coconut milk
1/8 cup water
1 tsp vanilla extract
1/2 cup chocolate chips, nuts or cranberries



1. Preheat oven to 350 degrees. Line a bread pan with parchment paper.
2. In a large bowl, mix together all of the dry ingredients.
3. In another bowl combine the oil and the honey. Once mixed add the eggs followed by coconut milk, water and vanilla extract
4. Slowly mix together wet and dry ingredients. Add chocolate chips, nuts or berries.
5.  Pour into bread pan. Optional: sprinkle the top with cinnamon.
6. Bake for 40-50 minutes, inserting a toothpick to ensure it is cooked all the way through. 

*I wanted to have less sugar in my recipe so my bread is more bitter, (I really do mean dark chocolate cinnamon bread). If you want a sweeter bread increase the amount of honey to taste or sprinkle the top with sugar and cinnamon.
